Rainbow Vegetable Stir-FryPrep time 10-15 mins
Cook time 5-10 mins What you will need: Red, yellow, orange Bell Peppers Broccoli callow flower carrot chips cucumbers garlic ginger red onion Plum Sauce Extra Virgin Olive Oil two mixing spatulas I came across this life changing recipe while taking an online children's nutrient class via Coursera, a free online college platform where you can take just about any class online. This recipe was intended to get my children interested in eating their vegetables, for all of the obvious nutrition needs. The instructor insisted if you start you meals prepping your vegetable stir fry and allow the children to eat it first, making it full of color, not only will they eat all of their vegetables, [because we would serve it first before meal, juice or snack] they would love it, and want it more... Well, that just so happen to be the case with my little ones, and the whole family. I ended up turning it into a meal, with lo mien noodles [egg noobles] and chopped chicken breast! Instructions: In a medium to large pan, heat 1-2 table spoons of Oil. Place broccoli, carrots, callow flower & red onions in pan, enough to cover the bottom. While those heat on low-medium heat, prepare your bell peppers, ginger, garlic and cucumbers. After you have prepped the bell peppers, ginger, garlic, and cucumbers, raise the heat to medium high. Mix what is already in the pan 2-3 times before adding the remaining ingredients. Add the bell peppers, ginger, garlic and cucumbers to the mix, then mix the vegetables with two mixing spatulas. BE CAREFUL NOT TO OVER COOK. Vegetable stir fry is best when the vegetables remain a little crisp. Once you have sautéed them to your liking, turn off heat, and mix in Plum sauce or sauces depending on how much sauce you like. As Shakir Karim of Wayne Avenue Health Store located 5007 Wayne avenue Philadelphia Pa 19144 always says, "Health is Wealth!"
When I first started working there, I didn't know much about the natural approach to life. If I had a headache I'd pop a pill, cold take something from Walgreens or Rite aid. I never really gave it any thought that an herb could do the trick, or that their was some sort of natural version to what Id find in stores, that was heck of a lot cheaper, and much better for you. Well 3 years in, a husband and 2 kids later, I'm amazed at what I can get from Wayne Avenue Health! to be continued... gotta run to class. In Sha Allah I will post an example of my Prep List, and 5 Freezer Crock Pot Meals that last for my house hold 2 weeks. "Salad in a Jar" for me, is a healthy alternate to 1) expensive lunch trucks (eating out) and 2) imbalance diet many workforce, college students, and young people often fall prey to. Now you can use Mason Jars, I bought some "mason jars" from a local Asian dollar store in my area. A $1 each and got prepping. I learned a thing or two from thee above, and I'd prep for a week at a time!
Example of some salad jars 1) Spinach Red Lettuce Quinoa Corn Back Beans Chickpeas [any dressing you prefer] 2) Spinach Red Lettuce Red Onion Strawberry's Vegan Chicken Tomato Sliced Almonds [Raspberry Vinaigrette] 3) Spinach Red Lettuce Chard Bell Peppers Spicy Cashews Vegan Breaded Chicken Tomatoes Raisins Cucumbers [Pomegranate Vinaigrette] Ever since I've got hooked on crockpot dinners and meal prepping Pinterest has been a pot of Gold! I found this recipe one day, and it was so simple that I found myself unprepared and left with only 10 mintues to come up with a plan for dinner, when I decided to use this recipe. I had just come home from the supermarket, and had the drumsticks, and potatoes. I had a can of crushed tomatoes and some steak seasoning in my cabinets. I simply layered the crock pot the way it was shown in the picture and the only thing I did different was add a little bit of vegetable stock. I put it on high at 3:00 pm and by 8:30 pm [break fast] it was ready! I just put it over rice and waalaah! Dinner was served!
